Aloe Vera Dessert

A few weeks ago we stopped by the Southeast Asian Market to pick up a couple of cans of green curry (makes a quick yummy meal with brown rice, chopped carrots, and low fat coconut milk!) and Nate brings this to the register. He says it looks kind of good, it's pineapple flavored, and it even comes with a spoon! All this deliciousness for a mere 89 cents.
Well, the taste wasn't as bad as I expected, a little odd, but the pineapple flavor really hides things well. The texture, however, was what I imagine nibbling on a dead jellyfish would be like. Bleh.

And that is why I love the Southeast Asian Market - you never know what adventure is waiting for you.

prejudice and discrimination can be overcome.”

Strep Throat

Thursday: Woke up with a mild sore throat, drank some throat coat tea and went to work, internship, & school as usual.

Friday: Woke up with fire breathing dragon attached to my right tonsil and major body aches. Guessed it might be Strep and stayed in bed all day.

Saturday 1am: Nate goes to Walgreens to get numbing throat spray because I can't swallow without crying.

Saturday 9am: We are at Urgent Care when it opens. Strep test comes back positive and Swiss doctor looks in my throat and says, "You poor woman." We get an antibiotic, pain meds, and Nate continues to be the best nurse ever. I sleep pretty much all day.

Sunday 6pm: Lots of sleep, tea, soup, and back rubs from Nate and I feel so much better. I can actually swallow without wincing and I'm no longer contagious. After being a big sick blob all weekend I finally had a bit of energy and decided to bake a thank you for Nate while he was at church. I made his favorite, peanut butter cookies, but added chocolate chips & coconut to the recipe. He was in love.

I will never take swallowing for granted again.

Haiti

My heart is hurting for the people in Haiti.
I'm praying for them.

Rubik's Cube

I put a Rubik's cube in Nate's stocking this year and he totally figured out how to solve it! I mean who really knows how to do that? I'm pretty impressed. I think it will look great on his resume.

10 years and counting...

Nate and I met 10 years ago at a New Year's Eve party in Salt Lake City called First Night. Most of our friends and family know the crazy story of how we met that involves tales of bullriding, the slurpee pick up line, and and of course the midnight kiss!
Technically the first time we laid eyes on each other that night was at the Shilo Inn--so to celebrate that magical moment we decided to book a suite at Shilo Inn and head downtown to the "Eve" party. We met up with Nate's parents and had a blast ringing in the New Year.

We started out with a delicious dinner at P.F Changs
(thanks Aunt Koreen for our gift card!)
(and a shout out to the guy in the background of our picture -
at least chew your food before you ruin someones photo!!)

Then we headed outside to check out the festivities at the Gallivan Center.
It wasn't snowing but it was still totally freezing!
We were all bundled up and Nate's dad looked like Randy
from a Christmas story.

The USANA rail jam was really cool and then we
walked over to Off Broadway Theatre and saw a pretty funny improv show.

Then we strolled around Temple Square...

It was almost midnight and and we were tired of being out in the cold so we decided to head back to the hotel room to watch the fireworks from the perfect view of our hotel window. We had comfy chairs, noise makers, bubbly, and of course Dick Clark in the background.

HAPPY
2010!!
